Amoroso's Baking Co. Produces Millions of Philly Cheesesteak Rolls Annually
Amoroso's Baking Co. has been a cornerstone of Philadelphia's iconic cheesesteak culture for over a century, supplying the signature rolls. Operating around the clock, the facility produces more than 250 million cheesesteak and hoagie rolls each year, with each 800-pound batch of dough yielding 2,500 rolls. The extensive process involves meticulous flour handling, precise dough division, and baking in one of the country's largest independent ovens to achieve the distinct flavor and texture required for authentic Philly cheesesteaks.
For over a century, Amoroso's Baking Co. has been the primary producer of bread for Philadelphia's renowned cheesesteaks. The massive bread factory operates continuously, manufacturing more than 250 million cheesesteak and hoagie rolls annually.
Each 800-pound batch of dough at the facility yields 2,500 rolls. The production process begins with approximately 200,000 pounds of hard red spring wheat flour delivered weekly, which is then sifted and transported to mixers. Workers carefully measure flour and water proportions for each large batch.
Dough is divided into precise, round portions by machine before entering eight production lines. Rolls are shaped, and quality control checks ensure correct shape and length. Any rolls failing inspection are repurposed for bread crumbs or animal feed, minimizing waste.
After initial production, rolls undergo several hours of fermentation in a cold room, followed by a warm proofing stage. This process is crucial for developing the characteristic sweet and yeasty flavor associated with Amoroso's bread. Each roll is then scored by hand before entering one of the largest ovens in an independent baking facility in the United States.
The rolls travel 135 feet through the oven for approximately 20 minutes, emerging golden brown with a robust crumb designed to support substantial amounts of steak and cheese. Once baked, the rolls are packaged and distributed to grocery stores, sandwich shops, and venues such as Lincoln Financial Field.
Amoroso’s is deeply integrated with the city's cheesesteak scene, supplying over 2,000 dozen rolls for Philadelphia Eagles home games. Michelin-recognized Dalessandro's Steaks & Hoagies, for instance, receives 65 dozen rolls daily through twice-a-day deliveries. (Source: Eater)
