All Well, a new restaurant in Chicago, opened its doors in April, bringing a concept described as "casual prix fixe" to the city's dining scene. The establishment is led by a team known for their work at Oriole, a fine dining restaurant recognized by both the Michelin Guide and the James Beard Awards. Executive chef and co-owner Larry Feldmeier, along with chef-partner Noah Sandoval, are key figures behind the new venture.
The restaurant's name, "All Well," originated from a casual text message exchange between Feldmeier and Sandoval. They would text each other "all well" as a check-in on the restaurant and team when one was out of town, a practice that inspired the name.
The opening process in April encountered some challenges, particularly concerning supply chain issues. Feldmeier noted that items like glassware and plates, ordered months in advance, were unexpectedly delayed. Despite these hiccups, the post-opening phase has been described as relatively smooth.
Building an opening team relied heavily on word-of-mouth referrals. General Manager Mary Christie, whom Sandoval had worked with previously, and Bar Director Maxx Kleiner, a former colleague of Feldmeier's from Oriole, were among the early hires. The hiring process also involved a "spiderweb" approach where initial team members recruited others, with some starting as late as opening day. Due to a tight timeline, training was minimal, often described as "trial by fire," which Feldmeier believes can be effective with a talented and experienced group.
All Well is featured as part of Eater's "Now Open" series, a yearlong initiative celebrating new restaurants in 2026 across Chicago, New York City, and Washington, D.C. The series includes exclusive meals hosted at these restaurants as part of "Dinner Party," presented by Capital One.
