The kitchen at Arlo Williamsburg, home to the onsite restaurant Sungold, manages a significant dining operation, serving thousands of guests across various services. Executive Chef Michael King oversees the culinary team responsible for hundreds of daily diners, room service orders, and catering for five event spaces and three bars on the property.
The hotel's kitchen serves nearly 4,000 hotel guests monthly, in addition to approximately 1,000 event guests each week. Operations include preparing over 2,000 eggs weekly and consistently producing large pancakes for brunch service. For common rooftop pool events, Sungold dishes, such as the spicy fried chicken slider, are adapted into party bites.
Chef King states that despite the high volume, the kitchen maintains a strong commitment to the quality of ingredients, technique, and cooking from scratch. This approach is intended to ensure consistent quality across all food served throughout the hotel.
The beverage operation, valued at $8 million, is also extensive. Head Bartender Armando Aceredo leads the preparation of nearly 800 daily garnishes and manages cocktail batching. One of the hotel’s top-selling cocktails is the frozen passionfruit margarita. Thoughtful preparation is a critical component across all aspects of the kitchen and bar services at Arlo Williamsburg.
